OUR CHEF INSPIRED, EASTER BRUNCH RECIPES
1. Whipped Ricotta Toast with Honey & Berries
Ingredients:

1 cup whole milk ricotta
-
1–2 tbsp Elias Wildflower or Liquid Honey
-
Zest of 1 lemon
-
Fresh berries (strawberries, raspberries, blueberries)
-
Fresh mint (optional)
-
Sourdough or brioche, sliced and toasted
-
Sea salt
Instructions:

Whip ricotta with lemon zest and a pinch of sea salt until smooth and airy.

Spread generously on warm toast.
-
Top with fresh berries, torn mint and a generous drizzle of Elias Honey, and torn mint.

Serve immediately—it’s light, fresh, and crowd-pleasing!
2. Honey-Glazed Mini Scones
Ingredients:

2 cups all-purpose flour
-
1 tbsp baking powder
-
½ tsp salt
-
6 tbsp cold unsalted butter, cubed
-
⅓ cup heavy cream
-
¼ cup Elias Alf/Clover, Wildflower or Liquid Honey (plus more for glazing... or use Elias Cold Pressed Clover instead!)

1 egg
-
Optional: lemon zest, dried fruit, or chopped nuts
Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment.

Whisk flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs.

In another bowl, whisk cream, honey, and egg. Combine with dry ingredients to form dough.

Turn onto a floured surface, pat into a 1-inch-thick round, and cut into mini wedges or rounds.

Bake for 12–15 minutes until golden.

While warm, brush tops with a little warmed Elias Honey for shine and sweetness!
3. Roasted Carrots with Honey & Thyme
Ingredients:

1 lb baby carrots, peeled

2 tbsp Elias Buckwheat or Liquid Honey

2 tbsp olive oil
-
1 tbsp fresh thyme (or 1 tsp dried)

Salt and pepper to taste
Instructions:

Preheat oven to 400°F (200°C).

Toss carrots with olive oil, honey, thyme, salt, and pepper.

Roast for 25–30 minutes, until tender and lightly caramelized.

Finish with a drizzle of Elias Honey before serving, if desired.
